In mid-October, manually selecting the oldest Carignan planted in 1909.
Elaboración
Grape selection upon entry to the winery. Fermentation/maceration for about 30 days in a small tank. Manual punch-downs daily. Malolactic fermentation takes place before being transferred to a clay amphora, specially made for this wine. ABV: 14.5%
